Crispy Baked Buttermilk Chicken
1 cup extra-virgin olive oil
3 cups buttermilk
3 pounds chicken tenders
1 teaspoon salt
Pinch of Cayenne pepper
Freshly ground black pepper
3 cups freshly grated Parmesan
3 cups Italian-style seasoned bread crumbs
Preheat the oven to 500 degrees F.
(Please ask a parent or adult to do this!)
Brush 1 tablespoon of oil over foil lined baking sheets.
Pour the buttermilk in a large bowl.
Add the chicken tenders and stir to coat.
Let marinate for 20 minutes in the refrigerator.
Mix parmesan cheese and bread crumbs in large, shallow pan.
Coat each piece of chicken on both sides.
Lay the coated chicken tenders on the oiled baking sheets side by side.
Next, drizzle olive oil over the chicken tenders.
Bake until they are
cooked through and golden brown, about 20 minutes.
Serve with your favorite dipping sauce (we like balsamic and garlic, but it's great with ranch dressing too!)
