"Monkey Ear" Pasta
(Our hand-made pasta shaped like monkey ears!)

2 cups semolina flour
2 cups all-purpose flour

1 to 1 1/4 cups tepid water

Place both types of flour in a large mixing bowl and stir to mix well.

Make a well in the center of the flour and add the water a little at a time, stirring with your hands until a dough is formed.

You may need more or less water... "Quanto Basta!"
Place the dough on a floured work surface and knead it like bread for 8 to 10 minutes, until smooth and elastic.

Cover and let stand for 10 minutes, at room temperature.

Roll the dough into long dowels about 3/4-inch thick.

Cut into flat disks about 1/4-inch to 1/2-inch thick.

Press the center of each disk with a thumb to form the "inner ear" of a monkey ear!

Set aside under a dish towel until ready to cook.

In a large pot, bring to a boil 6 quarts of salted water.

Add pasta and cook until tender, about 3 to 5 minutes.

Drain in a colander.


Toss with Sausage & Broccoli:

1 large bunch of Broccoli, stems trimmed
3 tablespoons olive oil
1 pound Italian-style sausage, casings removed
3 garlic cloves, minced
Pinch dried crushed red pepper flakes
1/4 cup grated Parmesan

Cook the broccoli and set aside. (Microwave with a little water for 2 minutes or boil).

Heat the oil in a heavy large skillet over medium heat.

Add the sausage and cook, breaking it up into pieces with a spoon, until browned and juices form, about 12 minutes.

Add the garlic and red pepper flakes, and sauté until fragrant, about 2 minutes.

Add the broccoli to the pan with the sausage mixture and toss to coat with the juices.


Add the "Monkey Ear" pasta to the skillet.

Stir in the Parmesan and serve immediately.


Quanto basta means 'enough,' or 'the amount that is needed.'...
