Mushy Sweet Peas

4 cloves of uncooked garlic cloves
1 head of baked garlic cloves
¼ cup of olive oil
4 lb. frozen peas
1 stick of butter
4 tablespoons of creme fraiche or double cream
4 tablespoons of marscapone cheese
4 slices of cooked bacon, chopped
Pepper to taste
Salt to taste

Preheat oven to 400 degrees
Cut ¼ off the top of a head of garlic
Place in a piece foil large enough to enclose the head
Add a bit of salt on the exposed garlic cloves
Drizzle oil on garlic cloves
Wrap up the garlic and tightly seal
Place on baking sheet for 30 minutes or until cloves are soft
When cloves are cooled, squeeze garlic into a bowl and set aside

Boil water with remaining 4 garlic cloves
Make sure to remove garlic skins
Add frozen peas and cook for about 4 minutes
Drain Peas
Transfer peas to blender or food processor
Add butter
Add Crème fraiche
Add Marscapone
Add Chopped bacon
Pepper
Salt

Blend until Mushy!

Serve Mushy Peas as a side dish to chicken or spooned on crostini.
